From the 'Symply Too Good To be True vol 3' by Annette sym

750g lean beef mince
5 totilla sheets (can get really low fat ones these days)
1/2 cup grated light cheese
1 tsp crushed garlic
1/2 cup corn kernels
1 cup small capsicum diced
1 x 425g can crushed tomoatoes
3 tablespoons tomato paste
1 1/2 cups water
1 tsp beef stock powder
35g packet Taco Seasoning
cooking spray

Preheat oven to 180C.
In a large saucepan coated with cooking spray saute mince.
Drain and place in a separate bowl.
Add the rest of the ingredients (except the tortilla sheets and cheese) in the saucepan, bring to the boil, simmer 10 minutes.
Remove one cup of the tomato mixture and put aside.
Combine the mince with the rest of the tomato mixture.
Spray a pie dish with cooking spray.
Lay one tortilla on the base and top with 1 1/2 cups of the sauce, repeat 3 times.
Top with last tortilla and cover with the reserved tomato mixture. Sprinkle with the grated cheese.
Bake for 30 minutes or until cheese is browned.

Serve in wedges.

When I made it I only had 500g of mince so added another can of tomatoes instead. I am thinking this time I'll add a can of lentils and just use one can toms

I do my own version of this, but haven't made it for ages!
