OK, I have been dying to start a thread of favourite recipes here as we are all so often talking about food.

My favourite recipe at the moment is for ANZAC Biscuits. This is by far the best recipe for these that I have ever used!

ANZAC Biscuits
Ingredients:
1 cup plain flour
1 cup sugar
1 cup rolled oats
1 cup coconut
125g butter
1 tablespoon golden syrup
1 teaspoon bicarb soda
2 tablespoons boiling water (add a little more if the mixture is dry)

Method:
Melt butter, add syrup, water and bicarb soda. (Mixture should froth a bit.)
Pour over combined dry ingredients and then drop by the teaspoon full onto a greased tray, leaving room to spread. Bake in a very moderate oven for 15 mins. (150C in an electric fan forced oven.)

Give this recipe a try and let me know what you think...

This is the same as mine Very Happy works out a treat all times. What we did once was I bought a pavlova tray and DD2 made 1 anzac biscuit out of the mix - it was gigantic :lol:

This is a quick simple one you might have it though.
Easy Slice

1 cup SR flour
1 cup coconut
1 cup mixed fruit or any of your choice
1 cup castor sugar
tspn vanilla
120gm melted butter/marg

Combine all ingredients then add slightly beaten egg and melted margarine/butter. Press into greased slice tray and cook in a mod. Oven 180 C
for 30-35 mins.
*Ice while hot if desired with a glace icing or...
*Before baking sprinkle with 100’s & 1000’s or...
*Before baking sprinkle with sunflower seeds or...
*Before baking sprinkle with nuts.

Linda, as a substitute for coconut, why not use something like rolled oats or even grated apple? (You may have to adjust the ratio of wet / dry ingredients slightly.)

That's a good idea and I know for many things (thinking of charmane) apple puree is a good substitute for sugar in recipes.

I make these scones all the time although you might have this recipe but it is so simple
Lemonade Scones
3 cups SR flour, pinch salt, sifted together. Make a hole in center of flour and add 1 cup cream (you can use a light cream) and 1 cup of lemonade. Mix together with a knife until it comes together in a dough. Put onto a floured bench lightly knead (the secret of a good scone is not to handle it too much)So once all ingredients stick together pat with your hand (don't roll) into about a 2cm thickness.Cut into circles put fairly close together on a tray brush with milk bake at 200c for about 10 - 15mins. Best eaten on same day but can be frozen and defrosted as needed. Enjoy Yum!!!

Oh the trick to good scones is just like Kayjay said mix the dough with a knife and cut it! LOL I know it sounds silly but it works then the next thing is to put it onto a floured board and only turn once! Pat down and place cut out scones really close together on the tray! This pushes them up! You can even cut them with the knife instead of a cutter or glass...if you aren't making them to share with visitors as this helps too.
