Apricot & Almond Stuffing
here is my fave stuffing recipe for roast chicken...
60g butter
1 onion, finely chopped
1/4 cup slivered almonds (you can also use pine nuts for something different)
1/4 cup diced dried apricots
1 cup fresh white breadcrumbs
1/2 cup parsley
salt and freshly ground black pepper, to taste
heat butter in a pan, add onion then almonds and stir over moderate heat until almonds are lightly golden.
add apricots, breadcrumbs, parsley and seasonings and stir through.
stuff loosely into the chicken, tie the legs together and roast as per usual.
YUMMO!!!

I love how you say 'and roast as per usual' what is 'usual' if you don't do roasts

Ooooh yummy!!!!! I'm going to have to try this!!! I recon it'll be nice stuffed in a boned leg of lamb too... mmmmmm

Oh no I'm not, I'm seriously asking because that's how mine turn out, they either bounce from being under cooked or would break a window from being over cooked, ask Vic, I don't do roasts. Mine always end up giving your jaw a good workout, never tender like those you see on tv or buy at the pub.

if you want a quick n easy roast chicken, get one of the microwavable roast chickens. (I know you can get them from Woolies.) They are in the chicken section of the meat dept and come in their own cook in bag. They are GREAT! (You CAN'T stuff them up!)
