I had to post this recipe up for you guys, as I found it the other day and it was so quick and easy and gave really good results! Banana Choc Chip Muffins 290305

Banana Choc Chip Muffins

Ingredients
60g butter
2 cups SR flour
1/2 cup castor sugar
1/2 cup milk
2 eggs
2 ripe bananas, mashed
1 cup (200g) choc chips

Method
Preheat oven to 200C. Line a medium muffin tray with paper cases.
Melt butter and set aside to cool slightly.
Sift flour into a bowl, stir in sugar. Make a well in the centre of the dry ingredients.
Using a whisk, lightly beat milk, eggs and butter in a jug.
Add to dry ingredients, along with banana.
Using a wooden spoon, gently mix until just combined. (Don't beat mixture or they will be tough.)
Stir in choc chips.
Spoon mixture into muffin cases. Bake for 20 mins or until firm on top when lightly touched.
Leave in tray for a couple of minutes, then put on a rack to cool.

Note:
You can substitute other ingredients for the choc chips - eg, sultanas, other dried fruits, nuts and you can even substitute the banana with apple, berries, etc.

These are great for lunches, simply wrap each one individually and freeze! Banana Choc Chip Muffins 290305

Thanks Sue! I love making muffins! Unfortunately last week when I made muffins, I got myself a lil' souvenir...
in the shape of a burn... D'OH! It's healing up nicely now though, but it's still like... D'OH!!!

Ouch Chantal.....Burns are painful....I have an Aloe Vera plant that we use for burns and sunburn in particular...sorry you dont live closer, I'd give you some!!
